Seared Pork County Ribs and Cornbread Dressing!

Today’s lunch is some seared pork country ribs with a side of cornbread dressing! Here are the ingredients!

For the pork ribs!
2 bone in pork ribs
1 tablespoon of B's Rubs Hickory Garlic Chipotle rub
1 tablespoon of vegetable oil
To start, I heated up large skillet on high heat and added in the vegetable oil. Once it was sizzling, I sprinkled the rub on all sides of the pork and seared them for 3 minutes a side. Once they were done, I let them cool on a platter while I made the dressing.

For the dressing!
1 (16 ounce) package dry corn bread mix
2 tablespoons butter
1/2 cup of chopped celery
1 small onion
2 beaten eggs
2 cups of chicken stock
2 tablespoons of dried sage
2 teaspoons of salt
1 teaspoon of pepper
First, I made the corn bread mix based on the package directions. Then I preheated the oven to 350 degrees. In a large skillet over medium heat, I melted the butter and sautéd the celery and onion until they were soft.
In a large bowl, I mixed the celery, onions, 3 cups of the corn bread, eggs, chicken stock, salt, and pepper.
I placed it all in an 8X8 greased metal dish and baked it at 350 degrees for 30 minutes. After I let it cool for about 5 minutes I served it with the pork ribs.
