Vegan Sausage and Vegetables!

Today’s lunch is some vegan sausages stuffed with vegan cheese with a side of sautéed vegetables!



Here are the ingredients!


· 3 pieces of dairy free Daiya smoked provolone- cut into strips

· 5 large vegan spicy sausage links

· 2 tablespoons of B’s Rubs honey chipotle rub

· 1 cup of white wine

· 1 large white onion- cut into chunks

· 1 large red bell pepper- cut into chunk

· ¼ cup of broccoli




I made a little slit in the center of the sausages and sprinkled the rub all over the sausages. I cut the vegan cheese into strips and placed them on top of the vegan sausages. I poured the wine around them and baked them at 400 degrees for 20 minutes, broiled them for 1 minute, and let them cool for about 5 minutes before serving.


For the side, I cut the onion, broccoli, and pepper into chunks and roasted them in small pan along with the sausage and served.
