Vegan/Gluten Free Stuffed Mushrooms!

Today’s appetizer recipe is some vegan/ gluten free stuffed mushrooms!

Here are the ingredients!


· 1/3 cup of Daiya vegan/dairy free chive and onion cream cheese spread

· 10 large white mushrooms- stems removed

· 2 tablespoons of vegan broccoli kale spread

· 2 fresh basil leaves- chopped finely

· ½ cup of frozen spinach

· 2 tablespoons of vegan butter- melted

· 1 teaspoon of salt

· 1 teaspoon of black pepper

First, I melted the butter and added it to a large bowl. I added in the spinach, chopped basil, kale spread, salt, pepper, and crème cheese spread and mixed it together.


I rubbed down the mushrooms to remove the dirt and popped out the stems. I finely chopped them and added them to the mushroom stuffing. I stuffed all the mushrooms and placed them in a round baking dish that was sprayed with non-stick spray. I covered them with foil and let them chill in the fridge for a day or so.


When it was time to cook, I baked them, uncovered, at 400 degrees for 20 minutes and let them cool for about 3 minutes before serving.
