Vegan Ginger Noodles!

Tonight’s dinner is a vegan noodle dish for our anniversary!
· 1.5 oz. of Ginger Root Powder- from Atlantic Spice
· 1 teaspoon of salt- for the noodle water
· 1 teaspoon of olive oil- for the noodle water
· 3 cloves of chopped garlic
· 1 (8 oz.) package of Chinese noodles
· 2 tablespoons of Kikkoman soy sauce
· 1 bag of 3 color pepper and onion strips (1 lb.)

To start with, I set a pot of water to boil on high heat. I added in the salt and oil and when the water reached boiling, I added the noodles and cooked them for 4 minutes.
In a large non-stick pan, I added in the ginger root powder, the garlic, soy sauce, and pepper and onion strips and cooked them on medium heat. Once the noodles were done, I drained them and added them straight to the peppers and cooked them for about a minute to absorb all the flavors and served.
