Vegan Feta Gluten Free Pasta!

Today’s lunch is some vegan feta gluten free pasta!

Here are the ingredients!
· 1 box ( 9 ounces) of gluten free brown rice noodles
· 1 ounce of Basil Walnut Pesto- from Cape Fear Spice Merchants
· 1 cup of earth balance vegan butter
· 1 block (8.1 oz.) of vegan feta- Violife
· 1 tablespoon of salt- for the pasta water
· 1 tablespoon of olive oil- for the pasta water
First, I filled a large pot with water and added in the salt and olive oil. I covered it and set the heat to high. Once it reached a boil, I added in the noodles and cooked them for 10 minutes.
In a large skillet, I added in the butter and melted it completely. I added in the pesto seasoning and mixed it together to make the sauce.
Once the pasta was done, I drained it and tossed it with the vegan butter sauce. I crumbled up the feta and mixed it together with the pasta and served.
