Vegan and Gluten Free Noodles!

My dinner tonight is a vegan and gluten free noodle bowl!
Here are the ingredients!
• 1 box of Annie Chun’s Maifun brown rice noodles
• 1 tablespoon of curry powder
• 1 tablespoon of ground ginger
• 1 tablespoon of garlic salt
• 3 cloves of garlic peeled and chopped finely
• 1 tablespoon of soy sauce
• 1 tablespoon of squeeze ginger
• 1 teaspoon of sesame oil
To start with, I boiled water in a medium size pot. I added in the curry powder and ground ginger to this and cooked the noodles in it for 5 minutes. I love adding the seasonings to the noodle water because the noodles absorb all the flavors so much more.
While these cooked, I heated up my large non-stick skillet on medium heat and added in the garlic, sesame oil and soy sauce.
Once the noodles were soft, I drained then and added them to the hot skillet. I stir-fried the noodles until they had a nice color and served.
