Turkey Tenderloins and Sage Dressing!

Tonight’s dinner is some roasted turkey tenderloins paired with some homemade sage dressing!

Here are the ingredients!

For the turkey!

  • 3 small turkey tenderloins (1 pound total)

  • 1 cup of rock salt

  • 5 cups of water

  • 3 tablespoons of B’s Rubs Big Time BBQ Rub

  • 1 cup of shredded pizza blend 4 cheese

To start, I set the frozen tenderloins in the fridge overnight to help thaw them. In the morning, I filled a large metal bowl with the water and salt and placed the turkey in the bowl and covered it with a large cutting board.

I let it sit on the counter like this for 3 hours to help thaw and brine the turkey.

Once it was time to cook, I sprinkled them with the rub and placed them in a small glass baking dish. I srpinkled the cheese on top and baked them at 450 for 20 minutes.

For the dressing!

  • 1 (16 ounce) package dry corn bread mix

  • 2 tablespoons butter

  • 1/2 cup of chopped celery

  • 1 small onion

  • 2 beaten eggs

  • 2 cups of chicken stock

  • 2 tablespoons of dried sage

  • 2 teaspoons of salt

  • 1 teaspoon of pepper

First, I made the corn bread mix based on the package directions. Then I preheated the oven to 350 degrees. In a large skillet over medium heat, I melted the butter and sautéd the celery and onion until they were soft.

In a large bowl, I mixed the celery, onions, 3 cups of the corn bread, eggs, chicken stock, salt, and pepper.

I placed it all in an 8X8 greased metal dish and baked it at 350 degrees for 30 minutes. After I let it cool for about 5 minutes, I served it with the turkey.
