Stuffed Pork Chops!

Today’s lunch is some stuffed pork chops!

Here are the ingredients!
· 1 whole yellow onion
· 1 cup of frozen spinach
· 1 cup of Daiya chive spread- dairy free
· 1 cup of gluten free bread crumbs
· 8 slices of bacon
· 4 bone in pork chops
· 1 cup of chicken broth
· 1 tablespoon of salt
· 1 tablespoon of Dak’s Everything seasoning
· 3 tablespoons of salt- for the brine
· 5 cups of water- for the brine

To start, I set the pork in a large metal bowl and added in the salt and water. I let this sit on the counter for about an hour to help thaw the pork and brine it.
Once they were done brining, I patted them dry and set them on a large cutting board. I sprinkled the salt and everything seasoning all over them. I mixed together the spinach and breadcrumbs and spread to make the filling and spread this on each pork chop. I chopped the onion into slivers and placed some in each pork chop. I folded the pork chops in half and wrapped them in bacon and held it together with some toothpicks. I placed them all in a large glass dish and poured the chicken broth around them. I baked them a 450 degrees for 3o minutes and the served.
