Today’s lunch is some spicy Parmesan crusted pork chops with a side of spinach!

Here are the ingredients!
· 1 cup of B. T. Leigh’s Jalapeno Business sauce
· 2 bone in pork chops
· 2 tablespoons of grated parmesan cheese plus 1 teaspoon of cheese during cooking
· 1 bag (12 oz.) of frozen chopped spinach (for the side)
· 4 cups of water
· 1 tablespoon vegetable oil
To start with, I set all the spinach in a small pot to thaw out for the side. I cooked it on low heat until it was thawed and then served it with the pork.
Since the pork chops were frozen and vacuumed packed, I stuck them in boiling water for about 5 minutes in a large pot still in the wrapping to help thaw.
Once they thawed, I opened up the package and placed the pork chops on plate and patted them dry. I poured the sauce over all the sides and then sprinkled the Parmesan cheese on all sides to make the crust.
I seared them for 4 minutes a side on high heat in a large skillet that contained the vegetable oil. I sprinkled a dash more of cheese on them while they cooked to get a nice crust.
Once they were done, I let them cool for a minute and then served them with the spinach.
