Spicy Baked Chicken Tenders!

This baked chicken tender recipe is my first post of 2021!

Here are the ingredients!
· 3 tablespoons of Hot and Gnarly Garlic Rub
· 3 large boneless and skinless chicken breasts (cut into thin tender slices)
· 1 jar of Tomato, Basil, and Garlic sauce
· 3 cloves of peeled and finely chopped garlic
· ½ of a lemon (juiced and zested)
· 3 cups of water- for the brine
· 1 cup of salt- for the brine
· 2 chicken thigh bones- for the brine
For the side:
· 1 tablespoon of the Hot and Gnarly Garlic Rub
· 1 package of Butter and Garlic Uncle Ben’s Rice
· 1 package of Roasted Chicken Uncle Ben’s Rice
· 1 package of a 3 pepper and onion blend (12 oz.)
· 1 tablespoon of olive oil
· 1 tablespoon of salt
· 1 teaspoon of freshly ground black pepper
First, I filled a large pot with the water and salt and covered it. I set the heat to high and let it come to a roaring boil. I placed the frozen chicken breasts and bones in the water and let it boil for about 10 minutes so they would thaw.
Then I sliced the chicken into thin tender slices. I poured the sauce into a small casserole dish and placed the chicken in the dish. I sprinkle in the seasoning on all sides of the chicken and sprinkled in the garlic over the chicken and in the sauce. I sprinkled in the zest and the lemon juice over this as well.
I baked them, uncovered, at 400 degrees for 20 minutes until the chicken was 165 degrees
For the side, I heated up my large non-stick skillet on high heat and added in the oil and salt and pepper. Once the oil was sizzling, I added in the rice, seasoning, and pepper and onions. I cooked it for about 3 minutes to make a small rice stir-fry for the side, and then divided everything up into several containers for this week’s lunches.
