Roasted Pork Medallions!

Today’s lunch is roasted pork medallions seasoned with a spice from Cape Fear Spice in Wilmington, NC! Here’s the website link to check them out! https://www.spicemerchants.biz/wilmington-spice-store

Here are the ingredients!
· 1 ounce of Mesquite BBQ Rub-from Cape Fear Spice Merchants
· ½ of a large white onion- cut into big pieces
· 1 tablespoon of olive oil
· 3 cloves of garlic peeled and chopped roughly
· 1 large green bell pepper- cut into chunks
· 1 (1 lb.) pork tenderloin cut into small pieces
First, I added the cut up onion and pepper and garlic into a small metal dish and mixed it up. I cut up the pork tenderloin into 1 inch pieces making 8 medallions and added them to the baking pan. I sprinkled the whole pouch of the rub over everything and drizzled the olive oil over it.
I covered it tightly with foil and let them chill and marinate in the fridge for about an hour.
I baked them at 450 for 15 minutes covered and then removed the foil for the last 5 minutes to give them some color, and then let them stand for about 5 before serving. They turned out perfectly pink in the middle. I did not make a side for this because I all ready baked the vegetables with it.
