Roasted Pork Medallions!

Tonight’s dinner is roasted pork medallions! Here are the ingredients!

· ¼ cup of Jamaican Jerk seasoning from B’s Rubs
· 5 cloves of garlic- peeled and left whole
· 1 medium sized white onion- cut into thick rings
· 1 lemon- zested and cut into thin slices
· ¼ cup of white rice vinegar
· 2 cups of a dry Chardonnay
· 2 pork tenderloins- (30 oz.) total- cut into thick slices
First I preheated the oven to 450. I used my largest glass dish and put in the wine, Jerk seasoning and the peeled garlic cloves. I cut up the onion and put it in the dish as well. I zested the lemon and cut into slices and placed that in the dish.
I cut both pork tenderloins into 1 -inch thick pieces and placed them in the dish and rolled them around the seasoning. I used a little of the leftover seasoning to sprinkle on the tops of the pork
I baked the pork at 450 for 15-20 minutes. For the side I steamed some green beans in the microwaved and served.
