Roast Chicken!

Tonight I am making a whole roast chicken!

Here are the ingredients!
· 1 whole (3.5 pound) chicken
· 1 ounce of peppered rosemary from Cape Fear Spice Merchants
· 5 stems of rosemary
· 1 stick of unsalted butter
· 2 tablespoons of salt
· 3 tablespoons of olive oil
· 2 lemons- the zest and the slices
· ½ of a large white onion
· 6 whole cloves of peeled garlic
First, I zested the lemons then quartered them. After I took the chicken out of the plastic wrap, I drizzled it with olive oil and stuffed the rosemary, onion, and lemon slices inside the chicken.
I rubbed the lemon zest on top off and under the skin and sprinkled the salt and the rosemary all over the chicken. I rubbed the butter under the skin to help it get crispy and all over the top and I put some of the butter inside the chicken. I placed the whole cloves of garlic under the skin.
I roasted it uncovered at 400 degrees for 1 hour, broiled it at 500 degrees for 3 minutes to give it more color and to make the skin crispy, then removed it from the oven and let is stand for about 10 minutes before carving. I didn’t make an extra side for this.
