Plant Based Breakfast Pot Pie!

Today’s lunch is plant based sausage potpie!






Here are the ingredients!


· 6 Beyond Beef plant based sausages (7.4 ounces)- crumbled

· 1 cup of vegan egg substitute

· ¼ of a yellow onion- chopped finely

· 6 tablespoons of vegan butter-melted

· 1 cup of the original nutpods

· 1 cup of gluten free flour

· ¾ cup tapioca starch

· 1 tablespoon baking powder




To start, I melted the butter for 20 seconds in the microwave and added in the nutpods, flour, starch and baking powder. I blended all of this together to form the dough. I sprayed my 9 inch metal pan with some non stick spray and spread half of the dough in the pan.


In another small bowl, I mixed together the crumbled vegan sausages , the finely chopped onion, and vegan eggs. I poured this in the pan over the dough and used the other half of the dough to cover it.


I baked this at 400 degrees for 20 minutes and let it cool for 5 minutes before serving.
