Pineapple Espresso Rub Pork Chops!

Today’s lunch is pineapple flavored pork chops! Here are the ingredients!

· 1 tablespoon of Riley’s Spice Pineapple Espresso Rub

· 2 boneless pork chops

· ½ can of pineapple- do not drain

ree


To start with, I put the pork chops into a plastic resalable bag. I added in the rub and pineapple juice. I chopped up the pineapple into small pieces and added it into the bag. I let this marinate for 3 hours. I put the leftover pineapple into a small container and put it in the fridge for a snack later.

When it was time to cook, I fished out the pineapple chunks and put them in a bowl. I heated up a large pan on medium heat and added in the pork chops and cooked them for 3 minutes a side. I put the pineapple chunks around the pork chops to added even more flavor and to help make a topping for the pork chops.

Once the chops were done, I plated them and topped them with the pineapple sauce. I didn’t make a side for this since we just wanted a small lunch.
