Today’s recipe is a vegan and gluten free pasta dish made with some vegetables from my Hungry Harvest box!

Here are the ingredients!
2 small yellow onions- from the Hungry Harvest box
1/3 cup of the original nutpods
1 tablespoon of olive oil
1 teaspoon of garlic powder
2 teaspoons of salt
1 box of Good and Gather gluten free pasta from Target
2 tablespoons of olive oil- for the pasta water
1 tablespoon of salt- for the pasta water
1/3 cup of freshly grated vegan Parmesan cheese
To start with, I filled a large pot with water and added in the olive oil and salt. I set the heat to high and covered it. Once it reached a boil, I added in the spaghetti and cooked it for 11 minutes stirring occasionally.
In a large pan, I added in the finely chopped onions , garlic powder, salt, and oil and cooked them for about 10 minutes to get some color. I added in the nutpods and the freshly grated vegan cheese and whisked it together to make the sauce. Once the pasta was done, I drained it and tossed it with the sauce and served.
