Lentil Pasta with Vegan Cheese!

This week is starting with a yummy, gluten free, lentil pasta dish simmered in a vegan butter and vegan cheese sauce!

Here are the ingredients!
· 1 box (12 ounces) of gluten free rice and lentil spaghetti
· 1 tablespoon of salt- for the pasta water
· 1 tablespoon of olive oil- for the pasta water
· 4 ounces of vegan salted butter
· 3 cloves of peeled and finely chopped garlic
· 1 ounce of vegan Parmesan- grated finely
First, I filled a large pot with water and added in the salt and olive oil. I covered, set the heat to high and once it reached a boil, added in the pasta and cooked it for 9 minutes.
In my large non-stick skillet, I added in the butter and melted it on low heat. Once it was melted, I added in the garlic and the grated vegan cheese and whisked it together to make the sauce. I let it simmer on low while the pasta finished cooking.
Once the pasta was done, I drained, tossed it with the sauce, and served.
