Lemon-y Cheesy Pasta!

Tonight’s dinner is a vegetarian pasta dish!




Here are the ingredients!


· 1 box of Barilla Angel Hair

· 1 fresh lemon- the zest and juice

· 1 cup of dry white wine

· 1 large white onion- cut into small pieces

· 3 large cloves of garlic- chopped into small pieces

· 8 ounces of freshly grated mozzarella cheese

· 1 tablespoon of salt

· 1 teaspoon of pepper

· 1 tablespoon of salt- for the pasta water

· 1 tablespoon of olive oil- for the pasta water

· 1 box of Barilla Angel Hair



To start, I filled a large pot with water and added in the salt and olive oil. I covered it and set the heat to high. Once it reached a boil, I added in the pasta and cooked it for 5 minutes.


In a large pan, I added in the cut up onions and cooked them on high heat for about 2 minutes to get them to caramelize. Once they did, I cut the heat to low and added in the garlic and lemon juice and zest.


Once the lemon was incorporated with the onions, I cut the heat to high and added in the wine and let this simmer for 5 minutes.


Once the pasta was done, I tossed it wit the onions and sauce and then added some grated cheese on top and served.
