Jalapeno Chicken!

This week’s lunches are baked Jalapeno chicken tenders!

Here are the ingredients!
· 1/3 cup of B.T. Leigh’s Jalapeno Business sauce
· 2 large boneless and skinless chicken breasts- cut into bite size pieces
· 1/3 cup of breadcrumbs
· 2 eggs- lightly beaten
The chicken was frozen, so I set in the fridge to thaw out for the day. When it came time to cook, I set the oven to preheat while I prepped the chicken. I cut the 2 chicken breasts into bite sized nugget pieces.
I used my breading station for this stage. I poured the Jalapeno sauce into one slot, the eggs, which I beat with a fork in a small bowl, into the middle slot, and the breadcrumbs went in the third slot.
I dredged the chicken in all of these items, and then spaced it out on a large cookie sheet with a wire rack on top of it to help make the chicken crispy.
I baked it for 30 minutes at 400 degrees, then broiled it at 500 degrees for 1 minute. For the side I made some vegetable pasta tossed with some leftover takeout vegetables.
