Hashbrown Casserole!

I love making a hashbrown casserole! It's so quick and easy!

Here are the ingredients!


· 8 ounces of Daiya Medium Spicy Queso- dairy free

· 8 ounces of frozen hash browns

· ½ cup of Earth Balance dairy free butter- melted

· 1 small yellow onion- finely chopped

· 1 tablespoon of garlic salt

· 1 teaspoon of freshly ground black pepper

· 11.2 ounces (1 carton) of the original nutpods- dairy free

· Non stick spray

· 6 Beyond Beef Sausage patties

1 cup of vegan taco cheese

6 Beyond Beef sausage links

First, I chopped up the sausage and placed it all in a skillet to brown. I added in a the olive oil to coat the pan. Once the sausage was brown, after about 5 minutes, I took it out of the pan and broke it up into small chunks and placed it in a large bowl. I cut up the onion into small pieces and placed it in the hot pan and cooked it until all the pieces had some color on it and then mixed it with the sausages. I mixed in the frozen hash browns.


In a small pan, I placed the spicy queso and melted it on medium heat for about 10 minutes. It was frozen solid so I wanted this in liquid form so I could mix it in. Once it as liquid, I mixed it in.


I lined a small glass dish with foil and dumped the whole mixture into the pan. I topped it with the vegan taco cheese and baked it at 450 for 20 minutes.
