Today’s lunch is grilled pork tenderloin! I marinated this Saturday morning and didn’t cook it until Sunday morning so it marinated for a little over 24 hours.

Here are the ingredients!
• 2 tablespoons of Riley’s Griller’s Garlic Rub
• 2 tablespoons of olive oil
• 5 cloves of garlic- peeled and left whole
• 1 pork tenderloin (1.15 lb.)
I cut some slices into the pork and put the garlic cloves into the slices. I poured the olive oil over the pork and sprinkled the garlic rub over it. I wrapped it in saran wrap and let it marinate in a glass dish for about 24 hours.
Before cooking, I let it sit on the counter for about 15 minutes to come up to room temperature.
I grilled it 7 minutes a side on medium heat, seared it on high heat for 2 minutes a side, and then let it stand for 12 minutes before slicing.
For the side, I just made some mashed potatoes in the skillet that just needed to be heated up.
