Greek Pasta!

Tonight’s dinner is a Greek pasta dish!

Here are the ingredients!

  • 1 can of black olives- drained and roughly chopped

  • 1 box of Barilla mini farfalle

  • 1 ( 8 ounce) block of fresh feta- roughly chopped

  • 1 bag ( 8 ounces) of fresh spinach

  • 1 small yellow onion

  • 2 small red bell peppers

  • 1 tablespoon of salt- for the pasta water

  • 1 tablespoon of olive oil- for the pasta water

  • 1 tablespoon of olive oil

  • 1 whole lemon- the zest and juice

  • 1 teaspoon of salt

  • 1 teaspoon of black pepper


To start, I filled a large pot with water and added in the salt and olive oil. I turned the heat to high and covered it. Once it reached a roaring boil, I added in the farfalle and cooked it for 8 minutes.


I chopped the onion into small pieces an and added them to a hot pan that I drizzled in oil. I added in the salt and pepper and let this cook together while I waited for the pasta to be done.


Once the pasta was done, I drained it and tossed it with the peppers and onion. I added in the bag of fresh spinach and crumbled up the block of feta and the finely chopped olives, the lemon zest and juice and added it to the pan.


Once the pasta was done, I tossed it with the feta, pepper, onion, and olive mixture and served.
