Ginger Curry Noodles!

For my dinner tonight, I am making a sweet potato noodle vegan stir-fry!


Here are the ingredients!


• 2 packages of sweet potato noodles

• 1 tablespoon of salt for the noodle water

• 1 tablespoon of olive oil for the noodle water

• Half of a large yellow onion- cut into slivers

• 4 cloves of finely chopped garlic

• 3 tablespoons of Kikkoman soy sauce

• ¼ cup of white wine

• 1 tablespoon of ginger for the noodle water

• 1 tablespoon of ginger for the stir fry

• 1 tablespoon of curry powder for the noodle water

• 1 tablespoon of ginger for the noodle water








First, I boiled water in a small pasta pot and added in the salt, curry powder, ginger, and oil. I cooked the noodle for 6 minutes.


In a large sauté pan, I added all the other ingredients and stir-fried them while I waited for the noodles to finish cooking. When they done, I drained them and added them straight in with the onions and cooked them for about a minute to absorb the flavors and then served.
