Today’s lunch is a vegan gnocchi dish made with some Riley’s seasoning and nutpods! Here are the ingredients!
· 1 tablespoon of the Riley’s Griller Garlic Rub
· 2 tablespoons of the original oat nutpods
· 1 package of gnocchi
· 3 cloves of peeled and finely chopped garlic
· 1 tablespoon of salt
· 1 tablespoon of olive oil

I love this dish because it only takes about 5 minutes to make! To start, I filled a small pot with water and added in the olive oil and salt. I covered the pot and set the heat to high.
While I waited for the water to boil, I heated up a medium size saucepan on low heat and added in the garlic rub, chopped garlic, and nutpods. I whisked this together and let it simmer to release all of the yummy garlic flavor!
When the water boiled, I added in the gnocchi and cooked it for 3 minutes, until all of it rose to the top. I drained it with my big strainer scoop so I did not have to use a big colander and put the gnocchi straight into the sauce.
I tossed it to coat and then served. I did not make a side for this because I only wanted a small lunch without leftovers.
