Fried Pork Chops!

Today’s lunch is fried pork chops with a side of onion rings!




Here are the ingredients!


· 4 pork rib chops

· ½ of a lemon-zest and juice

· 2 cups of Bench views whole wheat flour

· 3 tablespoons of Gnarly Garlic Rub seasoning

· 1/2 large yellow onion- cut into large rings

· 3 eggs

· 2 cups of vegetable oil


I love fried foods so we are ending the week with some fried pork chops! First, I filled 2 small skillets with oil- each one got 1 cup. I turned the heat to medium and while they got to a simmer, I started seasoning the pork chops and onion rings.


I used my little metal breading station so in the first tray, I poured the egg wash. I cracked all the eggs in a separate bowl and whisked them together and poured it in the tray. In the second tray I added the lemon zest, lemon juice, and the rub seasoning. I whisked this together. In the third tray, I added the flour.


I battered all the pork chops in all 3 of these trays and then dipped them in the simmering oil. I fried them for 5 minutes.


For the side, I sliced the large onion into thick slices, peeling off the outer layer, and dipped each slice into each of the dredging stations, just like with the pork chops. Once they were battered, I dropped them into the other small skillet and fried them for 3 minutes.


Once everything was done, I placed all pork and onion rings on a wire wrack with a cookie sheet under it to help it cool and to drip off the access oil, then served.
