This morning I made a dairy free and gluten free fettuccine alfredo dish with some Daiya cheese! Check them out with the link below!

Here are the ingredients!

  • 1 cup of Daiya mozzarella dairy free shreds

  • 1 bag of Tinkyada Brown Rice fettuccine

  • 2 tablespoons olive oil

  • 1 tablespoon minced garlic

  • 2 tablespoons gluten free flour

  • 1/2 cup vegetable broth

  • 3/4 cup of the original nutpods

  • 1/2 – 1 teaspoon coarse salt

  • 1 teaspoon nutritional yeast

  • Black pepper, to taste

  • 1 teaspoon of salt- for pasta water

  • 1 teaspoon of olive oil- for pasta water

To start, I heated the olive oil on medium heat in a large pan. I added in the garlic and flour and whisked it together. I slowly added the vegetable broth, the nutpods, salt, yeast, pepper and Daiya cheese and whisked it together until the cheese was melted and it had blended together into a sauce.

In a large pasta pot, I added the eater, salt, and olive oil, covered it and let it come to a boil on high heat. Once it was boiling, I added in the pasta and cooked it for 13 minutes. When it was done, I drained it, tossed it with the sauce and served.
