Dairy Free/Gluten Free Blueberry Muffins!

Here are the ingredients!


· 1 cup of the original nutpods

· ½ cup of Manitoba Harvest hemp hearts

· 1 teaspoon apple cider vinegar

· 2 cups all-purpose gluten free flour

· 2½ teaspoons baking powder

· ¼ teaspoon baking soda

· ½ teaspoon salt

· 2 sticks of melted vegan butter

· ½ cup + 2tbsp. granulated sugar

· ¼ cup + 2 tbsp. canola oil

· 1 teaspoon vanilla extract

· zest of 1 lemon

· 1½ – 2 cups fresh blueberries




First, I preheated the oven to 400 degrees. In a small bowl, I combined everything but the blueberries and whisked it all together until it was smooth. Then I gently folded in the blueberries and filled the 3 ramekins that I sprayed with Pam.


I baked them for 15 minutes then let them cool for 10 minutes before serving.
