Curry Noodles!

Today’s lunch is some vegan curry noodles!

Here are the ingredients!
2 tbsp peanut oil
t tsp pepper
1 tbsp salt
⅓ jar yellow curry paste
1 400ml light coconut cream
3 bundles of kelp noodles
1 tsp lime juice
1 tbsp brown sugar
2 long red chilis thinly sliced
To start, I filled a large pot with water, set the heat to high and covered it. Once the water was boiling, I added in the kelp noodles and cooked them for 5 minutes.
In a large skillet, I added in the peanut oil, pepper, salt, curry paste, coconut cream, lime juice, sugar and sliced red chilies and whisked it together. I let this cook on medium heat to make the sauce and once the noodles were done, I drained them and tossed them with the sauce and served.
