Chimichurri Steak and Mashed Potatoes!

Today’s lunch is a steak in a chimichurri sauce with a side of homemade mashed potatoes!





Here are the ingredients!


First the chimichurri sauce!


1 cup firmly packed fresh flat-leaf parsley leaves

3 to 4 garlic cloves

2 tablespoons fresh oregano leaves

1/3 cup extra virgin olive oil

2 tablespoons red or white wine vinegar

1/2 teaspoon sea salt

1/8 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes



First, I finely chopped the parsley, fresh oregano, and garlic into fine pieces and then placed it in a small bowl and added in the olive oil, salt, pepper, and red pepper flakes. I stirred it up and set it aside.



Next ingredients!


1 ribeye steak (1 pound)

1 small white onion- cut into small pieces


I cut the steak into super thin slices and tossed in a hot skillet on high. I added in the chimichurri sauce and the onion and cooked it for about 3 minutes. Once it was done I set it aside and started on the homemade mashed potatoes.



For the mashed potatoes!


1tablespoon of Kosher salt

1 1/2 pounds boiling potatoes

1/4 cup of milk

4 tablespoons (1/2 stick) unsalted butter

1/2 cup of buttermilk

1/4 teaspoon of freshly ground black pepper




Now for the mashed potatoes! In a large pot, I added in the salt and filled it with water. I set the heat to high and covered it. I peeled the potatoes and cut them into 1/2 inch cubes. Once the water started boiling, I added the potatoes and brought the water back to a boil. Then I turned the heat to low and simmered them, uncovered, for about 15 minutes until the potatoes fell apart. I added in the buttermilk, the milk, the butter, and the pepper and mashed them with my metal masher to get the consistency that I wanted and then gave them a stir to mixing the flavor and served it with the steak.
