Today’s lunch is a spicy BBQ pork dish!
Here are the ingredients!
• 1 tablespoon of Riley’s Spice Texas Style BBQ Hickory Rub
• ½ oz. of mild hot sauce
• 3 cloves of finely chopped garlic
• 2 thin boneless pork chops- cut into thin pieces

I prepped everything this morning so it would get to absorb all the flavors.
To start with, I all ready had the chops thawing out last night in a plastic bag. I sliced them into thin pieces and put them back in the bag for marinating. I added in the rub, hot sauce, and garlic and let all of this marinate together in the fridge for about 2 hours.
When it was time to cook, I heated up a medium sized skillet on low heat and added the pork. I did not add oil because I did not want the meal to be greasy. I cooked this, covered, for 30 minutes so it would cook slowly.
I did not make a side with this because I just wanted a small lunch.
