Today’s lunch is a barbecue baked hasselback chicken breast! Here are the ingredients!
· 1 teaspoon of Riley’s Texas Style BBQ Hickory Rub
· 1 large boneless and skinless chicken breast
· 1 tablespoon of BBQ sauce

I had this chicken breast in the freezer, so I thawed it out in the fridge all night. This morning, I took it out of the plastic bag and covered it with a small piece of plastic wrap and put in on a small cutting board.
I used my mallet to pound it out into a thinner piece. I made little slices in the top so it would be hassalback style. I put the chicken in a small sandwich bag and added in the spice. I let this chill in the fridge for an hour before cooking.
Once it was time to cook, I removed the chicken from the bag and put it in a small pie dish. I drizzled the BBQ sauce over it and baked the chicken at 400 degrees for 45 minutes.
I did not make a side for this since the chicken breast was large enough for lunch.
