Baked Chicken Tenders and Mac and Cheese!

Today’s lunch is some baked chicken tenders!

Here are the ingredients!
3 large boneless and skinless chicken breasts
2 cups of chicken broth
1 cups of oat milk nutpods
2 tablespoons of Paleo Powder all purpose seasoning
The side is homemade Mac and cheese!

Here are the ingredients!
8 ounces of uncooked macaroni
1 tablespoon of salt
1 tablespoon of olive oil
2 cups of chicken broth
¼ cup vegan butter
2 ½ tablespoons all-purpose flour
3 cups of oat milk nutpods
2 cups of vegan shredded sharp Cheddar cheese
½ cup vegan grated Parmesan cheese
First, I set all 3 of the frozen breasts in a large bowl and filled it with water and salt. I let it sit on the counter for about 3 hours to help thaw. Then I patted the chicken dry and sliced them into chicken tender size pieces. I seasoned them with the seasoning and placed them in a large casserole dish and poured the chicken broth and nutpods around them and baked it uncovered for at 450 for 30 minutes.
Now onto the mac and cheese! First I melted the butter in a medium skillet over low heat. I slowly added the flour, whisking until well combined. I added the nutpods, whisking constantly until smooth. I added the cheeses, and cooked over low heat until cheese was melted and the sauce was a little thick. In a large pot I added the chicken broth and the salt and turned the heat to high. Once it was boiling I added the noodles and cooked them for 7 minutes and then drained them and added them to the cheese sauce, stirring to coat and then I served it with the chicken.
