Baked Chicken Tenders!

Tonight’s dinner is some brined and baked chicken tenders! Here are the ingredients!

For the brine:

• 3 tablespoons of salt

• 5 cups of water

• 2 boneless chicken breasts cut into thin slices


I poured the water and salt into a large metal bowl, and cut the chicken breasts into thin slices. I put all the chicken in the brine, covered it with saran wrap, and let it brine in the fridge for 3 hours and 15 minutes. I wanted this to brine for 3.5 hours so for the last 30 minutes of the brining process, I put it on the counter to get to room temperature.


For the seasoning:

• 2 teaspoons of salt

• 2 tablespoons of the Dak’s Lemon Pepper seasoning

• 4 tablespoons of butter


When it was time to cook, I took the tenders out of the brine, put them on a plate, patted then dry, and then sprinkled the salt and the Dak’s seasoning on them.


I baked them at 400 degrees for 30 minutes in a glass pie dish. I added the butter on top of the chicken to help make the sauce. For the side, I made 3 packets of Uncle Ben’s rice. Two were roasted chicken, and one was garden vegetable. Once I made them in the microwave I added them into the dish with the sauce and mixed it up. I spilt the rice in between some containers and split up the chicken for multiple lunches.
