Today’s lunch is some baked chicken breasts!
Here are the ingredients!
· 3 tablespoons of the Que 4:4 original seasoning
· 1 cup of oat nutpods
· 3 large boneless and skinless chicken breasts- thawed out and left whole
· 3 tablespoons of salt- for the brine
· 1 tablespoon of olive oil
· ½ of a green bell pepper
· ½ of a white onion

Since the chicken was frozen, I took them out of the freezer this morning and put them straight into the brine. I filled a large bowl with water and added in the salt and chicken. I covered it with saran wrap and let them sit in this mixture for about 3 hours so they could thaw and absorb some flavor.
When the chicken was done brining, I took them out of the water, patted them dry, and then spread them out in a medium sized glass casserole dish. I sprinkled the seasoning on al sides of the chicken and poured the milk around it.
I baked it at 450 degrees for 20 minutes and then let them stand for about 10 minutes before serving.
For the side, I made an onion and pepper stir-fry. I heated up a large skillet on high heat and added in the oil. I added in the thinly chopped pepper and onion and stir-fried it until it was nice golden color and then served it with the chicken.
