Baked BBQ Chicken Tenders and Rice!

Tonight’s dinner is a baked BBQ chicken tender and rice dish!






Here are the ingredients!


• 2 medium size boneless and skinless chicken breasts (2.38 lb.)

• 4 tablespoons of Riley’s BBQ Rub

• 4 tablespoons of McCormick garlic salt

• 3 peeled and finely chopped garlic cloves

• 3 tablespoons of BBQ sauce

• 1 tablespoon of water

• 2 packets of Uncle Ben’s Roasted Chicken Ready Rice

• 1 tablespoon of salt- for the brine


To start, I set the chicken in a bowl on the counter in a brine to help thaw and season them. This took about 2 hours. When they were totally thawed, I sliced them into thin slices to make the tenders.


I sprayed some Pam in a medium sized glass casserole dish and put all the rice in the bottom of the pan. In a large bowl, I mixed together the chopped garlic, the garlic salt, the BBQ Rub, the tablespoon of water, and the garlic salt. I added in the chicken and stirred it to coat.


I put all the chicken in the pan with the rice and baked it uncovered at 375 degrees for 45 minutes. I let it stand for about 10 minutes before serving so the juices could redistribute.
