3 Cheese Spinach Shells!

Tonight’s dinner is a 3-cheese pasta dish!

Here are the ingredients!
· 8 ounces of feta cheese
· 3.5 ounces of crumbled goat cheese
· 2 cloves of peeled and finely chopped garlic
· 1 cup of chopped bacon
· 1 bag ( 12 ounces) of frozen spinach
· 1 box of pasta shells
· 1 cup of freshly grated parmesan
· 1 tablespoon of salt- for the pasta water
· 1 tablespoon of olive oil- for the pasta water
To start, I filled a large pot with water and added in the salt and olive oil. I covered it and set the heat to high. Once the water was boiling, I added in the pasta shells and cooked them for 15 minutes.
In a large pan, I added in the chopping bacon and cooked it on medium heat to make it crispy. Once the bacon browned, I turned the heat to low on a fresh pan and added in the chopped garlic. I drained the bacon and added it into this clean pan along with the bag of spinach. To help the spinach thaw faster, I added in cooked pasta as soon as it was done and tossed all of this with the bacon. I sprinkled in the feta and goat cheese, gave it a stir to coat all the shells and served.
